Hot Artichoke Dip

Ingredients
- 2 artichoke hearts, rinsed
- 2 cups + 2 tbsp freshly grated Parmesan cheese
- 1/2 cup reduced-fat mayonnaise
- 2 cloves garlic, minced
- 2 tsps grated lemon zest
- cayenne pepper to taste
- salt and pepper to taste

Preparation
Step 1
Preheat oven to 400 degrees.
Chop artichoke in a food processor.
Add 2 cups of Parmesan and rest of ingredients.
Puree until smooth.
Season with salt & pepper. Place in 2 shallow baking dishes (2 cup capacity). Sprinkle each dish with 1 tbsp Parmesan.
Bake until golden on top and heated through, about 10-20 minutes.
