Finally figured out a yummy meatloaf option that doesn't use breadcrumbs.

Ingredients

  • 1

    small onion, finely chopped

  • 1

    clove garlic, crushed

  • 2

    carrots, finely diced

  • 2

    sticks celery, finely diced (optional)

  • 400

    g tin of chopped tomatoes

  • 1

    beef stock cube

  • 1

    tbsp Worcestershire sauce

  • 1

    tbsp tomato puree

  • 1

    tsp dried mixed herbs

    g extra lean minced beef

  • 75

    g Smash instant potato

  • 1

    egg, lightly beaten

  • 28

    g fresh flat-leaf parsley, chopped

Directions

In a large saucepan coated with cooking spray, cook the onion for five minutes until softened. Add the garlic, carrots and celery and cook a further five minutes. In a bowl, combine the cooked vegetables with the remaining ingredients. Mix well. Press into a greased bread pan and cook at 200 degrees C for 50-60 minutes or until cooked through. (Optionally add ketchup to the top in the last 10 minutes of cooking). Remove from oven and let sit for 10-15 minutes before cutting to serve.
