Preparation
Step 1
Grease two 8-inch round layer cake pans. Line bottoms or dust with flour.
Stir together into large mixer bowl:
2 1/4 cups all-purpose flour
4 teaspoons baking powder
3/4 teaspoon salt
1 1/2 cups sugar
ADD:
1/2 cup shortening
3/4 cup milk
1 teaspoon vanilla
Beat for 1 minute at low speed of electric mixer.
ADD:
1/4 cup milk
3 eggs
Beat for 2 additional minutes at low speed. Pour batter into pans and bake in preheated 350 oven for 35 - 40 minutes or until cake springs back when lightly touched. Cool 5 minutes, then remove form pans.
