German Potato Salad

Ingredients

  • 2 boiled eggs
  • 4 lbs. potatoes, cooked and cut up
  • 1/2 cup vinegar
  • 3/4 cup water
  • 3 tbsp. sugar
  • salt and pepper, to taste
  • 1/2 onion, chopped
  • 3 stalks celery, diced
  • 2-3 tbsp. mayo
  • chopped parsley
  • 1/4 tsp. celery seed
  • 4 pieces bacon, diced

Preparation

Step 1

Boil water, vinegar and sugar for 5 minutes. Turn off and let cool. Add salt and pepper to water/sugar mixture. Mash egg yolks in a bowl and cut up whites of eggs fine. Add to potatoes. Add water mixture to potatoes. Add onion, celery, mayo, parsley and celery seed. Add bacon and refrigerate.
