Ingredients
- 1 cup black olives
- 2 1/2 cups flour
- 1 tablespoon baking powder
- 2 tablespoons sugar
- 1 teaspoon salt
- 1/2 cup fresh basil, minced
- 2 eggs
- 1/3 cup olive oil
- 1/2 cup finely chopped onions
- 2/3 cup buttermilk
Preparation
Step 1
Preheat oven to 350. Crush olives with knife. Drain on a paper towel and chop. In large bowl, stir dry ingredients and basil. Add olives and toss. In small bowl, whisk eggs, oil, onion and buttermilk. Add to flour mixture stirring until batter comes together. Brush 2, 8 x 4 x 2 1/2 loaf pans with olive oil. Divide dough in 1/2 on a lightly floured board. Shape into smooth loaf. Place in pan. Bake approximately 1 hour 15 minutes until toothpick comes out clean. Turn onto wire rack.
