Cheese, Potato, and Wild Rice Soup

Ingredients

  • 1/2 C wild rice, uncooked
  • 1 1/2 C water
  • 1/2 lb bacon, cut in pieces
  • 1/4 C chopped onion
  • 2 cans condensed cream of potato soup -dilute with 1 can liquid, 1/2 milk and 1/2 water
  • 1 quart milk - may use skim
  • 8 oz. grated cheese (American or cheddar)- may use lo fat

Preparation

Step 1

Combine wild rice and water; cook over lo heat 45 min; drain and set aside
Fry bacon pieces and onion until bacon crisp; drain on paper towels
Place soup in large pan, dilute as directed; stir in milk (1 quart), bacon, onion, cheese and cooked rice; stir until cheese melts.
