SANDWICHES = Tuna Salad

Ingredients

  • 3 5 oz. cans albacore tuna, packed in water and strained
  • 1/4 cup minced onion
  • 2 Tbsp. olive oil
  • 2 tsp. lemon juice
  • 1/2 tsp. sugar
  • Salt and Pepper
  • 1/2 cup plus 2 Tbsp. mayonnaise
  • 1 celery rib, minced
  • 2 chopped hard-cooked eggs

Preparation

Step 1

Place tuna in medium bowl and mash with fork.

Microwave onion and oil in small bowl until onion begins to soften, about 1 1/2 to 2 minutes. Cool slightly, about 5 minutes.

Combine onion mixture, lemon juice, sugar, 1/2 tsp. salt and 1/2 tsp. pepper with tuna and let sit for 10 minutes.

Stir mayonnaise, celery and egg into tuna mixture. Season with salt and pepper to taste.
