Pork Loin with Coffee Sauce

Ingredients

  • 4 pounds pork loin, boneless
  • salt and pepper, to taste
  • 1 cup very strong coffee
  • 1/2 cup cream
  • 1/3 cup port wine
  • 2 teaspoons sugar
  • 1/4 cup water
  • 2 teaspoons cornstarch

Step 1

Preheat oven to 350. Tie the meat and season with salt and pepper. Place roast in a roasting pan, roast for 30 minutes. combine coffee, 1/4 cup of cream, the port and the sugar, pour over the roast. Continue roasting for another 2 hours, basting the roast every 15 minutes. This will give the roast a beautiful golden glaze. When the roast is ready remove from the oven, place on a platter and keep warm, rest for 20 minutes.
