Ingredients
- 1 tablespoon vegetable oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1/4 teaspoon salt and pepper
- 1 cup sliced broccoli florets and stems
- 1 carrot, diced
- 1 teaspoon grated orange rind
- 1 1/2 cups orange juice
- 1 tablespoon soy sauce
- 2 green onion, chopped
Preparation
Step 1
In small saucepan heat vegetable oil over medium heat; cook onion, garlic, salt and pepper, vegetables and orange rind, stirring often until softened, about 4 minutes.
Pour in orange juice; bring to boil. Stir in couscous. Remove from heat, cover and let stand for 5 minutes. Add soy sauce and green onion. Fluff with fork.
