Garbure Russian Rice

Ingredients

  • 1/2 cup butter
  • 1 2/3 cups long-grain rice, soaked for 30 minutes and drained
  • 1/2 teaspoon ground ginger
  • 1 1/2 teaspoons sesame seeds
  • 2 1/2 cups chicken stock
  • 1/2 teaspoon salt
  • 1/2 teaspoon fresh ground pepper
  • 1/2 cup slivered almonds, toasted

Preparation

Step 1

Preheat oven to 350.

In flameproof casserole, melt the butter over moderate heat; add rice and cook for 10 minutes stirring constantly. Add ginger and sesame seeds; cook for 3 mintues/ Pour in stock, salt and pepper; bring to boil, stirring constantly.

Put the casserole in over, uncovered, for 35 minutes or until all liquid is absorbed and rice is cooked. Toss with fork after 10 minutes and again after 20 minutes.

Taste and add more salt if necessary. Sprinkle with almonds.
