Ingredients
- 1 tablespoon butter
- 1 onion, chopped
- 2 cloves garlic, minced
- 1/2 teaspoon dried basil
- 1/4 teaspoon salt and pepper
- 1 cup long-grain rice
- 2 cups chicken or vegetable stock
- 1 cup broccoli, or peas
Preparation
Step 1
In saucepan, melt 1 T butter over medium heat. Cook onion, garlic, basil, salt and pepper for 5 minutes or until softened.
Add rice, stir for 1 minute to coat. Add stock; bring to boil. Reduce heat, cover and simmer for 20 minutes.
Add broccoli, cover and cook for 5 minutes or until rice is tender. Toss with fork and serve.
