Brussels Sprouts with Bacon

- 12 oz bacon, cut into pieces
- 1 1/2-2 lbs fresh Brussels sprouts, washed, trimmed and halved
- 2 cloves garlic, minced
- pinch of crushed red pepper flakes
- Serves 4-6

Step 1
Microwave Brussels sprouts until slightly tender, about 5 minutes. Do not over cook, set aside.
Heat large skillet over medium-high heat, add bacon pieces. Fry bacon pieces until crisp. Remove bacon with a slotted spoon and transfer to a paper towel lined plate. Pour out all but about 1-2 T bacon fat from skillet.
Drain water from Brussels sprouts. Return skillet to burner and when bacon fat is hot, add sprouts. Let the Brussels sprouts cook for 4-5 minutes. When the sprouts begin to brown, stir in garlic and red pepper flakes. If the pan begins to dry, add back a tablespoon of bacon fat.
Let the sprouts and garlic cook for another 2-3 minutes or until desired doneness. Take the skillet off the heat and stir in bacon.
