Morning Mix Up

Ingredients

  • 2 c frozen hash browns
  • 1 c ham, fully cooked, diced
  • 1/2 c onion, chopped
  • 2 tbs evoo
  • 6 eggs
  • salt and pepper to taste
  • 1 c cheddar cheese, shredded
  • GARNISH; minced chives

Preparation

Step 1

Saute potatoes, onion,and ham in evoo until potatoes are tender. In small bowl beat eggs, salt and pepper. Add to skillet and cook until eggs are done. Remove from heat; add cheese.
spoon onto serving platter and garnish with chives.
