Fresh Asparagus and Prosciutto Salad

Looks pretty served on salad plates for a luncheon.

Ingredients
- 1 # fresh asparagus
- 4 thin slices prosciutto
- 1 hard boiled egg. finely chopped
- 3/4 c shredded cheddar cheese
- prepared raspberry vinaigrette dressing
- 1 pkg spring mix lettuce
Preparation
Step 1
Trim asparagus and boil spears for 3-6 minutes until tender-crisp. Drain and dip in ice water to stop cooking process.
Place a small handful of lettuce on salad plate. Top with slice of prosciutto and 1/4 of asparagus. top with egg and cheese. Drizzle with dressing and serve.
