Ingredients

  • 10-12 Tomatillos
  • Medium Onion
  • Garlic-2 cloves
  • Sugar-1/4 tsp
  • Salt-1/2 tsp
  • Olive Oil-1 TBS
  • Jalapeno Pepper
  • 5-7 Tortilla-small to medium
  • Various Cheeses, i.e.-cheddar, mozzarella, feta, ricotta, cream, goat,queso.
  • Sour cream-2TBS
  • Blackening Powder
  • Shrimp
  • Black Beans
  • Sauteed Red Pepper
  • Sauteed Onions

Preparation

Step 1

-Melt all cheeses and keep warm.
-Boil water then add tomatillos and simmer for ten minutes.
-In food processor add tomatillos, garlic, onion, sugar, salt, jalapeno pepper, oil and 1/2 cup water from tomatillo boil water. Process until smooth then transfer to pan and cook on med-low heat for 15-20 minutes.
-Grease oven pan/dish and build in layers the tortillas and cheese. Spread generous amount of bodin sauce on tortillas and bake in oven at 350 for 30 minutes.
-Blacken and cook shrimp.
-Mix black beans and sauteed onions and red peppers and heat.
-To serve cut bodin in sections and pour more sauce overtop. Place shrimp and bean mixture on side
