Shrimp Scampi

Use raw shrimp. Clean and Devein the shrimp. Save the shells. The recipe calls for 1/2 cup wine. Simmer the shrimp shells in the wine for about 10 minutes. Add some extra wine so that you finish with 1/2 cup. Strain and use the enriched wine in the scampi recipe.

Ingredients
- 2 Tbsp butter
- 2 Tbsp extra virgin olive oil
- 4 garlic cloves, minced
- 1/2 cup dry white wine (you can substitute dry vermouth or marsala wine or chicken stock)
- 3/4 tsp kosher salt
- 1/8 tsp crushed red pepper flakes. *optional
- Freshly ground pepper, to taste
- 1 3/4 pounds large or extra large shrimp, shelled and deveined
- 1/3 cup parsley, chopped
- Freshly squeezed juice of half a lemon

Step 1
1. In a large skillet, melt the butter with the olive oil. Add garlic and sauté until fragrant, about 1 minute. Add wine, salt, red pepper flakes, and black pepper. Bring to a simmer. Let the wine reduce by half, about two minutes.
2. Add shrimp and sauté until they just turn pink, 2-4 minutes depending on their size. Stir in the parsley and lemon juice.
You can serve over pasta, or with crusty bread, or over rice, etc
