Living Caesar and Jumbo Croutons

Ingredients

  • Salad:
  • 2 heads of Romaine Lettuce
  • Dressing:
  • 1/4 cup cashews (raw)
  • 1/8 cup pine nuts (raw)
  • 3 Tablespoons olive oil
  • 1 medium clove of garlic
  • 1 teaspoon mild miso
  • 1/2 teaspoon salt
  • 1/2 teaspoon kelp granules
  • ground pepper
  • 1/2 - 1 teaspoon agave
  • 1/4 cup water
  • Croutons:
  • 5 - 6 slices bread
  • 1 1/2 - 2 tablespoon olive oil
  • 1/8 teaspoon salt

Preparation

Step 1

Salad:

Wash and chop lettuce and leave in collander to dry

Using a hand blender or blender, combine all ingredients (starting with 1/2 tsp agave) and puree until very smooth. Add additional water to thin dressing if desired. Taste test, adding additional agave if desired.
