Ingredients
- Salad:
- 2 heads of Romaine Lettuce
- Dressing:
- 1/4 cup raw cashews
- 1/8 cup raw pine nuts
- 3 Tablespoons olive oil
- 1 medium clove of garlic
- 1 teaspoon mild miso
- 1/2 teaspoon salt
- 1/2 teaspoon kelp granules
- ground pepper
- 1/2 - 1 teaspoon agave
- 1/4 cup water
- Croutons:
- 5 - 6 slices bread
- 1 1/2 - 2 tablespoon olive oil
- 1/8 teaspoon salt
Preparation
Step 1
Salad:
Wash and chop lettuce and leave in collander to dry
Using a hand blender or blender, combine all ingredients (starting with 1/2 tsp agave) and puree until very smooth. Add additional water to thin dressing if desired. Taste test, adding additional agave if desired.
