Lemon and spinach orzo

Ingredients

• Saute
• 3/4 c diced onion
• 1 tbs evoo
• 1 tbs minced garlic
• add
• 1 c dry orzo
• 1 c chicken broth hot
• 1 c hot water
• c steamed fresh baby spinach
• 2 tb lemon zest
• 1 tbs butter

Preparation

Step 1

saute first 3 ingred. Add orzo and stir to coat with oil. Cook 1-2 minutes stir in broth and water stirring till liquid is absorbed 9-10 minutes
off heat add spinach zest butter stir till spinach is wilted
