Swordfish with Red Pepper Sauce & Potatoes

Ingredients

  • 4 6oz swordfish steaks
  • 3/4 t kosher salt, divided
  • 1/2 t ground pepper, divided
  • 3/4 lb. new potatoes
  • 1 C roasted red peppers
  • 3 T slivered almonds
  • 7 t olive oil, divided
  • 1 clove crushed garlic
  • Chopped Italian parsley

Preparation

Step 1

Light grill
Pat swordfish dry; brush with olive oil & sprinkle with salt & pepper
Cut potatoes in half lengthwise. Place in vegetable steamer over boiling water. Steam 12 min.
Place bell peppers, almonds, 2 T olive oil & garlic in good processor & process until smooth. Add remaining 1/4 t each salt & pepper; pulse to combine
Grill swordfish steaks 4 min each side or until done.
Serve with sauce & potatoes. Garnish with chopped parsley
