LEMON AND GARLIC ROAST PORK

Ingredients

  • 1 (3 1/4 pound) lean, boneless pork loin roast
  • 3/4 tsp grated lemon rind
  • 1/2 tsp salt
  • 1/2 tsp ground cumin
  • 1/4 tsp pepper
  • 3 garlic cloves, minced
  • 1 cup low-salt chicken broth

Preparation

Step 1

Trim fat from pork. Combine next 5 ingredients in a small bowl; stir well and rub evenly over pork.

Insert a meat thermometer into one end of pork. Place pork in an 11 x 7 inch casserole; add broth to dish. Bake at 400 degrees for 30 minutes. Turn pork over and bake an additional 35 minutes or until thermometer registers 160 degrees. Discard broth.
