Ingredients
- 2 cups peeled and finely chopped apples
- 1 cup strong coffee or 1 tbsp instant coffee dissolved in 1 cup water
- 1 cup sugar
- 1/2 cup shortening
- 1 cup raisins
- 1 tsp cinnamon
- 3/4 tsp cloves
- 3/4 tsp nutmeg
- 1 tsp vanilla extract
- 2 cups flour
- 1 tsp baking soda
- 1/4 tsp salt
- 1 cup chopped nuts
Preparation
Step 1
Cook apples, coffee, sugar, shortening, raisins and spices in a saucepan gently until apples are tender. Remove from heat and cool. Add vanilla to cooled mixture. Blend together flour, baking soda and salt. Stir into apple mixture. Add nuts. Drop by heaping teaspoon onto an ungreased cookie sheet. Bake at 375 F for 12 minutes. Cool on a wire rack.
