Ingredients
- 1 lb. pasta, campanelle
- 6 ripe tomatoes
- 1 cup, fresh basil leaves
- 1 clove garlic, crushed
- 1/2 cup Mozzarella cheese, fresh
- 3 Tbs. sugar
- 1/2 cup olive oil
- salt and pepper to taste
- balsamic vinegar
Preparation
Step 1
Boil tomatoes until skin splits, cool. Take skins off, chop and sprinkle with sugar, let stand for 20 min., add a splash of balsamic vinegar. Cook pasts snf then drain. Add remaining ingredients to the tomato skins and pour over pasta, mix.
