Pasta Salad

Ingredients

  • 1 lb. pasta, campanelle
  • 6 ripe tomatoes
  • 1 cup, fresh basil leaves
  • 1 clove garlic, crushed
  • 1/2 cup Mozzarella cheese, fresh
  • 3 Tbs. sugar
  • 1/2 cup olive oil
  • salt and pepper to taste
  • balsamic vinegar

Preparation

Step 1

Boil tomatoes until skin splits, cool. Take skins off, chop and sprinkle with sugar, let stand for 20 min., add a splash of balsamic vinegar. Cook pasts snf then drain. Add remaining ingredients to the tomato skins and pour over pasta, mix.
