Ingredients
- 3 cups flour (1/2 whole wheat, 1/2 white for bread)
- 1.5 tsp baking soda
- 1.5 tsp baking powder
- 1.5 tsp cinnamon
- 4 eggs
- 3 cups sugar (reduce to 1.5 cups)
- 1 cup canola oil (1/2 cup oil and 1 serving applesauce)
- 7 ripe Anjou pear, peeled, cored and chopped into cubes (reduce to 5)
- 2 c chopped walnuts
Preparation
Step 1
Heat the oven to 350 degrees
In a large bowl, whisk together the four, baking powder, baking soda and cinnamon.
In separate bowl, beat together eggs and sugar, beat in oil (and add applesauce)
Add to the four mixture. Mix just until combined.
Gently fold in pears and walnuts.
Pour into 2 loaf pans (or 13 X 9 inch pan for cake)
Bake for 40-45 minutes (bread) or 1 hour 20 minutes for cake
