Ingredients
- 11g butter
- 20g goat cheese
- .5 TBS lemon rind
- 2 tsp fresh thyme, chopped
- 340g (~2 6 oz) boneless pork chops

1. Combine butter, thyme, goat cheese, rind, and salt and pepper to taste in a small bowl; set aside. Heat cooking spray in a large nonstick skillet over medium-high. Sprinkle pork chops evenly with 1/4 teaspoon salt and 1/4 teaspoon pepper.
2. Add pork to pan; cook 3 minutes. Turn pork over, reduce heat to medium, and cook until done, about 4 minutes. Place pork on a plate. Top each pork chop with 1/2 goat cheese mixture. Loosely cover pork chops with foil, and keep warm until ready to serve.
To create two 600-calorie servings, serve with 2 cups steamed rice and 250g haricots verts (French green beans).
