Grilled Salmon with Cilantro Chimichurri

Ingredients

  • Chimichurri sauce:
  • 1 cup packed cilantro leaves
  • 1/2 cup packed flat-leaf parsley
  • 1 Tbsp oregano leaves
  • 3/4 cup extra-virgin olive oil
  • 1 Tbsp coarsely chopped shallot
  • 2 medium garlic cloves, coarsely chopped
  • 1/2 tsp toasted and ground cumin seeds
  • 1/2 tsp crushed red pepper flakes
  • 1/3 cup red wine vinegar
  • sea salt and freshly ground cracked back pepper
  • Grilled Salmon:
  • vegetable oil, for brushing grates
  • 4 (6 oz) salmon fillets, pin boned and trimmed
  • sea salt and freshly ground black pepper

Step 1

Chimichurri sauce: Combine ingredients in food processor. Pulse until herbs are finely chopped, stopping and scraping down the sides of bowl as needed. Transfer to medium bowl. Taste and adjust seasoning with salt and pepper.

Salmon: Preheat grill or grill pan over medium-high heat. Coat grill grates with thin coating of oil Brush salmon fillets with oil and season with salt & pepper. Place salmon presentation side down and grill for 3-4 min. Using fish spatula, carefully flip and grill to medium, another 3-4 minutes for 1" thick fillets.
