Easy Pancetta & Asparagus Risotto

Ingredients

  • 1 tbsp olive oil
  • 1 tbsp butter
  • 1/2 tsp of salt & pepper
  • 1/2 chopped onion
  • 1 cup of finely chopped asparagus
  • 1 1/2 cup of arborio rice
  • 2 cups of hot broth (chicken or vegetable)
  • 1 1/2 cups of white wine (any)
  • 1/8 cup of shaved parmesan cheese

Preparation

Step 1

add olive oil and butter into pan
2.add onions
3.add pancetta
4.stir until translucent
5.add rice
6.stir for a few minutes
7.add hot broth & wine
8.simmer in low heat for 7 minutes
9.add asparagus and salt in between
10.stir occasionally
11.simmer for 15 mins
12.add cheese when broth dries
13.stir a few more minutes
14.serve and enjoy!
