Carrot-Mustard Slaw

Ingredients

  • 1 1/2 tablespoon dijon mustard
  • 2 tablespoon white wine vinegar
  • 1 tablespoon capers
  • 1/3 cup olive oil
  • salt & pepper to taste
  • 1 red onion, sliced thin
  • 1 pound shredded carrots
  • 2 celery stalks, thinly sliced
  • 1/4 cup chopped dill

Preparation

Step 1

Soak the red onion in water for 15 minutes; drain. Whisk dijon mustard, white wine vinegar and capers in a large bowl. Whisk in olive oil and season with salt and pepper. Add the carrots, celery, onion and dill and toss to coat.
