Feta and Pea Salad

Ingredients

  • 2 cups baby green peas frozen, thawed
  • 2 tbs evoo
  • 1 tbs red wine vinegar
  • 1 tbs honey
  • 2 tsp Dijon mustard
  • 2 radishes(add more), finely sliced
  • 1 small red onion, thinly sliced
  • 1/4 c crumbled feta cheese

Preparation

Step 1

Thaw peas.
Whisk together next 5 ingredients, plus salt and pepper to taste.
Add peas, radishes, onion and toss to coat. Sprinkle with feta.
