Ingredients

  • 6 granny smith apples
  • 1/2 lemon
  • 3 1/2 T cornstarch/arrow root powder
  • 1/4 t. nutmeg
  • 1 1/2 t. cinnamon
  • 1/2 cup honey
  • 2 T. butter
  • 2 cups almond flour
  • 1/2 teaspoon real salt
  • 1 t. cinnamon
  • 8 T butter
  • 2 1/2 T honey

Step 1

Preheat oven to 350 degrees. Lightly grease 6 small ramekins, place on baking sheet.

Peel and core apples and slice thin. Place apples in a large mixing bowl with lemon juice. Add cornstarch, nutmeg, cinnamon and honey and toss well to coat.
Divide apple mixture among ramekins.

Bake in preheated oven for 32 minutes. Prepare topping while apples are baking.

Place the almond flour, salt and cinnamon in a bowl and stir to combine. Cut the cold butter into very small cubes and add to flour mixture. Cut the butter cubes until it resembles coarse crumbs. Drizzle the 2 1/2 tablespoons of honey over the flour mixture and work in with your fingers. Mixture should form very large clumps.

After the apples have baked, divide the flour mixture evenly among the ramekins and bake for an additional 10-12 minutes or until they are lightly browned.

**I made this recipe using fresh peaches and it was delicious! Did not precook the peaches though - would have been too soggy.
