Meals (Thai Chicken &Corn Chowder)

Ingredients

  • 3 Tbsp butter
  • 2 medium shallots,chopped
  • 1 Lb boneless,skinless chicken breast halves,cut into 1-inch chunks
  • 1 can (13.5oz) unsweetened coconut milk
  • 1 can (12oz) evaporated milk
  • 1 can (10oz) corn kernels,drained
  • 1/2 Tsp cayenne pepper
  • 1/4 Tsp salt
  • 1/4 Cup diced red pepper
  • 2 Tbsp chopped fresh cilantro
  • 1 Tbsp lime juice
  • 1/2 Tsp grated lime zest

Preparation

Step 1

In pot melt butter over medium-high heat. Add shallots;cook until softened,about 3 minutes. Add chicken,coconut milk,evaporated milk,corn,cayenne pepper and salt;bring to boil. Reduce heat to low;simmer until chicken is just cooked through,about 10 minutes. Remove from heat;add red pepper,cilantro,lime juice and lime zest. Serve immediately.
