Ingredients

  • 1 preserved lemon
  • 2 Tbsp finely chopped flat-leaf parsley
  • 2 Tbsp finely chopped mint leaves
  • 2 Tbsp unsalted butter, at room temp
  • 1/2 cup dried raisins, soaked in hot water for 10 min and drained
  • 1/2 cup roasted unsalted pistachios, roughly chopped
  • 1 1/2 cups plain dried Israeli (pearled) couscous
  • freshly ground pepper

Step 1

Wash and cut preserved lemon. Discard the pulp and seeds. Mince rind and add to large mixing bowl with parsley, mint, butter, raisins, pistachios and salt.

Bring med sauce pan to boil over high heat. season water generously with salt. Add couscous and cook according to package directions. Once couscous is cooked and drained well transfer it to bowl with seasonings, tossing until all ingredients incorporated. Taste and adjust seasoning with salt and pepper.
