Ingredients

  • Cookie Dough:
  • 1 cup butter
  • 1 cup brown sugar
  • 1 cup white sugar
  • 2 eggs, beaten
  • 4 cups flour
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • Filling:
  • 1 pound chopped and pitted dates
  • 1/2 cup sugar
  • 1/2 cup water
  • 1 cup nuts

Preparation

Step 1

For the filling, combine dates, sugar and water.
Cook, stirring over low heat for five minutes
until hot and well blended into paste. For the
dough, beat butter until creamy. Beat in sugars
and then eggs. Blend in dry ingredients. Cover
and chill one hour or longer. Divide dough in half.
On floured cupboard, roll one portion into
rectangle 1/4 inch thick. Stir nuts into date
mixture and spread 1/2 over the dough leaving
a 1-inch border free of filling. Roll as for
cinnamon rolls. Cut roll in half, wrap in wax
paper and refrigerate one hour or more. To bake,
cut in 1/4 inch slices. Bake for eight minutes
at 375 degrees .
