Ingredients

  • 1 1/2 c cubed smoked or cooked skinless chicken breast (6 oz)
  • 1 c seedless grapes, halved
  • 1/2 c diced red onion
  • 3 thin stalks celery, diced (1 1/2 c)
  • 1/4 c fresh basil leaves, cut into thin strips
  • 1/4 c mayonnaise
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1 c blanched slivered almonds
  • 6 large flour tortillas or wraps, at room temp
  • 6 large lettuce leaves

Preparation

Step 1

1. Stir together chicken, grapes, onion, celery, basil, mayonnaise, salt, and pepper in a large bowl. Chill, covered, at least 12 min and up to 1 day. Stir in almonds just before assembling wraps.

2. Warm tortillas briefly in microwave, if desired. Center a lettuce leaf on each tortilla. Spoon 2/3 c chicken salad onto each leaf. Fold sides over salad and roll up each wrap tightly.
