SALMON W/LEMON AND GREEK SALAD

Ingredients
- For the salad:
- Servings: 4 oz salmon each
- 4 or 5 oz fillet of salmon
- 1 lemon, zest finely grated and lemon wedges cut evenly
- 1/4 tsp garlic powder
- 1/4 tsp salt
- Freshly ground black pepper
- 1 medium cucumber, peeled and cut into 1/4 inch dice (about 2 cups)
- 1 cup non-fat plain Greek yogurt
- 3 medium scallions thinly sliced/diced green and white parts
- 1/4 cup parsley roughly chopped
- 1/8 tsp salt or more to taste
- Freshly ground black pepper to taste

Step 1
Preheat oven to about 350 degrees. Rinse the salmon and pat dry. Lay salmon on a large piece of aluminum foil. Rub the top and sides of salmon
with the lemon zest and sprinkle with garlic powder, salt and pepper. Fold the foil over the salmon with the unpeeled lemon wedges placed on top. Bake for about 15-20 minutes.
Prepare the salad: Combine all the salad ingredients. Serve the salmon with the salad and lemon wedges. Garnish with additional parsley.
