Chicken tortellini salad
- 16 oz. cheese filled tortellini
- 1 green pepper, thinly sliced
- 1 red pepper, thinly sliced
- 1 small red onion, chopped
- 1/2 c. sliced black olives
- 1/2 c. feta cheese
- 1 boneless chicken breast half, cooked and sliced into thin strips
- 1/4 c. olive oil
- 2 tsp. grated lemon Zest
- 2 Tbs. ground walnuts
- 1 Tbs. honey
- 1/4 c. lemon juice
Cook pasta until al dents. Drain and cool under cold water. Refrigerate until chilled.
Prepare dressing by whisking oil, zest, juice walnuts, and honey.
Combine pasta, vegetables and chicken. Add dressing and cheese. Toss
