Ingredients
- 2 cans of chickpeas, drained (reserve 1/4 cup of liquid or water)
- 3-6 Tbsp tahini, stirred
- 2-3 cloves of garlic, minced
- zest of 1 lemon
- Juice of 1 lemon
- 1 tsp salt
- 1/4 to 1/2 tsp ground cumin
- 2 Tbsp chopped fresh parsley or cilantro
- 1 Tbsp Olive oil (EVOO)

Step 1
in a food processor, puree all ingredients through cumin. if too dry, blend in enough additional liquid or water to make a smooth paste.
spread hummus on a plate, sprinkle with herbs and drizzle with EVOO.
