Lemon Tart with Cherries

Ingredients

  • CRUST:
  • 1/2 cup oil
  • 2 tablespoons honey
  • 2 eggs
  • 3/4 cup flour
  • CREAM:
  • 2/3 cup water
  • 1/4 cup lemon juice
  • 2-3 tablespoons arrowroot starch
  • 3-4 tablespoons honey
  • 4 egg yolks
  • 2 tablespoons oil
  • Cherries for decorating

Preparation

Step 1

CRUST:

1. In a medium bowl wisk oil, honey, and eggs together.

2. Add flour and mix until thoroughly combined.

3. Let the mix sit for 2-3 minutes.

4. Press mixture into 9″ tart pan or 4-6 mini tart pans.

5. Prick the crust with a fork.

6. Bake for 10-15 minutes or until lightly golden.

7. Remove from oven and let cool.

CREAM:

8.Mix all the ingredients in a small saucepan.

9. Bring the mixture to a boil over medium heat, stirring constantly.

10. When the mixture starts to boil, remove from heat.

11. Let the cream cool for 10 minutes.

TART:

12. Pour lemon cream over top of the completely cooled crust(s).

13. Place the tart in the fridge for at least 1 hour or preferably overnight.

14. Serve with fresh fruit, berries or with a topping of your choice.

(Keep refrigerated when not eating.)
