Peanutty Coleslaw

Wasabi paste can be found in the Asian food section of the supermarket.

Ingredients

• 1/2 c cilantro, chopped, fresh
• 1/4 c green onion, chopped
• 3 tbs white vinegar
• 1 tbs sesame oil
• 2 tbs mayonnaise
• 1 tsp sugar
• 1 tsp ginger, grated, fresh
• 2 tsp wasabi paste
• 1/2 tsp salt
• 1/2 tsp pepper
• 1 (16oz) pkg shredded coleslaw mix
• 3/4 c lightly salted peanuts

Preparation

Step 1

Whisk together first 10 ingredients; add coleslaw mix, stirring to coat.
Cover and chill for 1 hour. Stir in peanuts just before serving.
