SUSAN’S SCALLOP POTATOES

Ingredients

  • 2 potatoes, sliced thinly
  • 1 onion, sliced
  • 2 Tbsp. butter
  • 4 Tbsp. flour
  • Milk
  • Salt and pepper
  • Shredded cheddar cheese

Step 1

Cheese sauce:
Melt butter in a frying pan and add the flour. Make into a roux, once all mix together add the milk gradually to the consistency you want – not too thick as you will be adding the cheese. Season with salt pepper and add 1 cup of shredded cheese and cook till the cheese is melted, stirring constantly.
In a covered baking dish, spread 1/3 of the cheese sauce, add the sliced potatoes and top with sliced onions. Do the same procedure ending with the cheese sauce on top. Spread more shredded cheddar cheese. Bake covered for 1-1/2 hour at 350 degrees or when the potatoes are tender.
Note: Use your own discretion to the amount of cheese sauce. The more the better as it keeps the potatoes moist when cook.
