Ali's Favorite Pasta

I made this for my daughter and she fell in love with it, not it is a staple in our house
Ingredients
- 3 boneless skinless chicken breasts cut into large bite size chunks
- 1 large yellow onion large dice
- 2 yellow squash cut in to bite sized rounds
- 2 zucchini cut into bite sized rounds
- 1 small eggplant or 2 Chinese eggplants large diced
- 1 quart chicken stock
- 1 large can diced tomatoes
- 1 small tomato paste
- EVOO
- S & P
- 1 sprig rosemary, 5 sprigs thyme and 2 sprigs sage tied.
- 1 t Italian seasoning
- 1 Lb Bow Tie Pasta
Preparation
Step 1
In a large dutch oven heat 2 T EVOO, when hot add the chicken and brown on all sides. Once browned, remove the chicken to a bowl and add the onion. Cook until the onion browns and then add the tomatoes and tomato paste. Cook and stir to deglaze the pan until it comes to a boil and then add the chicken back into the pan along with any juices. Add the vegetables and bring to a simmer. Add the chicken stock Salt and Pepper and tied herbs. Bring to a boil and then reduce to a simmer. Cover and simmer for 1 hour. In the last 30 minutes bring a pot of well seasoned water to a boil and cook the pasta per directions to aldente. Add the italian seasoning and allow to simmer for 1 minute. Check for salt and pepper and adjust as needed. Once the pasta is cooked, drain and place in serving bowls. Ladle the chicken and vegetables over the pasta and enjoy
