Ingredients

  • Dough:
  • 1 1/2 cups warm water
  • 2 tablespoons active dry yeast
  • 1/2 cup pure cane sugar
  • 1 teaspoon salt
  • 2 large eggs
  • 3/4 cup vegetable oil
  • 5 cups all purpose flour
  • Filling:
  • 6 tablespoons unsalted butter, melted
  • 2/3 cup pure cane sugar (or brown sugar)
  • 2-4 teaspoons ground cinnamon
  • Icing:
  • 1/2 cup finely chopped pecans
  • 6 tablespoons unsalted butter, softened
  • 2 cups powdered sugar
  • 1/4 tsp lemon extract
  • 1/4 tsp almond extract
  • 1/4 teaspoon salt
  • 3 tablespoons heavy whipping cream

Preparation

Step 1

Dough:

1.Place warm water (about 100-110°F) into the bowl of a stand mixer fitted with the dough hook.

2. Sprinkle the yeast into the water, then add the salt and sugar.

3. Stir with a wooden spoon.

4. Let rest until it bubbles, about 5 minutes.

5. In another bowl, whisk eggs and oil together.

6. Add the egg mixture to the yeast mixture along with 1 cup of the flour.

7. Start the mixer and then slowly add rest of flour, stirring in gradually.

8. Run the mixture for about 5-10 minutes or until the dough is elastic. The dough will be slightly sticky and very soft.

9. Turn it out onto a floured board and knead it a few times until it is no longer sticky.

10 .Place the dough into a bowl that’s been sprayed with nonstick cooking spray, turn to coat and cover the bowl.

11. Let rest until doubled.

12. Spray two 9x13” pans with nonstick cooking spray.

13. Punch down the dough and divide it in half.

14. Roll each half out to a rectangle that is about 12x15”.

Fill:

15. Spread each rectangle with melted butter, sprinkle with cinnamon and sugar to taste.

16. Roll up lengthwise. (Make roll as tight as possible.)

17. Cut into one-inch pieces.

18. Place in greased pan so that rolls just touch each other.

19. Let rise until doubled (about 20-30 minutes).

20. Preheat oven to 350°F.

21. Bake approximately 20-25 minutes.

Icing:

22. Beat butter and powdered sugar until crumbly, then add extracts, salt, and heavy whipping cream and mix until smooth.

23. The frosting should be thin enough to easily spread but not runny.

24. Sprinkle the warm rolls with chopped pecans and spread with icing.

Serve warm or room temperature.

Store tightly covered for up to 4 days.
