Salsa Recipe

Ingredients

  • 3 vine ripe or roma tomatoes – diced
  • 1 can chili ready diced tomatoes
  • 1 diced onion
  • 1/2 cup fresh diced cilantro
  • 2 tablespoons ground chile( in the bag of Spanish spices)
  • 2 tablespoons minced garlic
  • A pinch of salt
  • 1 diced jalapeno pepper ( for hotter add 1/4 habanero pepper or for less hot remove seeds from jalapeno pepper)
  • 1 lime quartered
  • 1 packet splenda
  • 2 ripe avocadoes - diced
  • Tapatio hot sauce - optional

Preparation

Step 1

Combine all ingredients except the avocado in a skillet. Squeeze the lime well and place the skin in skillet with the rest of the mixture. Bring to a boil then simmer until the onions are tender and the tomatoes are soft. Let stand for 5 – 10 minutes then squeeze lime again and remove. Add the avocado and stir. Taste and add more cilantro, chile, or garlic if desired. For a little hotter flavor add Tapatio hot sauce to taste. Chill and serve.
