Creamy Onion Sauce with Roasted Garlic and Thyme

This silky sauce is delicious with turkey, chicken, or fish.
Ingredients
- 1 T. olive oil
- 7 cloves, peeled whole garlic
- 2 medium yellow onions, thinly sliced (1-1/2 pounds)
- 3/4 t. chopped fresh oregano or 1/2 t. dried
- 1 T. balsamic vinegar
- 1-1/2 cups fat-free, low-sodium chicken or vegetable broth
- Salt and pepper to taste

Preparation
Step 1
1. Heat oil in a heavy 4-quart saucepan over medium-low heat. Add garlic and cook, stirring frequently, until light golden brown and caramelized, about 6 minutes. Do not brown garlic beyond this or it will be bitter. Add onion, and cook, stirring frequently, until onions are softened and just starting to brown, about 10 minutes. Add oregano and balsamic vinegar and saute for 2 minutes longer. Add broth and bring to a boil. Reduce heat and simmer, uncovered, for 5 minutes.
2. Transfer sauce to a blender or a food processor and puree or process until very smooth and creamy. Return to pan and heat thoroughly but do not boil. Season with salt and pepper. Garnish with chopped chives.
