Carribbean Fish Burgers

Ingredients
- Burgers:
- 18 ounces raw boneless, skinless salmon, chopped fine
- 1/2 cup minced red onion
- 1 egg white
- 2 T. minced, peeled fresh ginger
- 1-1/2 t. minced garlic
- 1 t. ground coriander
- 3/4 t. ground cumin
- 1/4 cup chopped fresh cilantro, without stems
- 1 T. fresh lime jice
- 1 T. grated lime peel
- 1 T. olive oil
- garnish:
- 1-1/2 cups baby salad greens
- 1 lime, cut into 8 wedges

Preparation
Step 1
1. Combine burger ingredients, except oil, in a mixing bowl. Form into three patties. (Burgers can be prepared ahead to this point.)
2. Heat olive oil in a 1-quart saute pan over medium heat. Add patties and cook, carefully turning once, until golden brown and cooked through, approximately 6 to 7 minutes.
3. Arrange 1/2 cup of greens per plate. Place hot burgers on the greens, serve immediately garnished with lime wedges.
