Ingredients
- 2 * 2 pounds medium waxy potatoes (fingerling), whole and unpeeled
- * Kosher salt
- 3 * 3 tablespoons butter
- * Handful or 2 chopped fresh parsley sprigs
Preparation
Step 1
Bring a large pot of water to the boil. Salt it and add the potatoes. Cook the potatoes until tender. Drain and peel. Toss with the butter and parsley to coat. Serve.
