Ingredients

  • 1/2 c butter, softened
  • 1 c flour
  • 1/4 c sugar
  • FILLING
  • 2/3 c dried apricots
  • 1 c water
  • 2 egg yolks
  • 3/4 c brown sugar
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • ICING
  • 1 3/4 c icing sugar
  • 1/4 c butter
  • 1 1/2 tsp grated lemon rind
  • 1 tbsp. lemon juice

Preparation

Step 1

In a bowl, cream butter, blend in flour and sugar, mixing well
Press into bottom of 9" square pan and bake at 325 about 20 min
Filling: cut apricots into small pieces. In a heavy saucepan bring apricots and water to a full boil; reduce heat and simmer, uncovered, about 20 min until most of the water is absorbed and the apricots are tender.
Beat egg yolks one min; add brown sugar and beat one min. Stir in flour, baking powder and salt. Mix well. Blend in apricot mixture and spread over warm base Bake at 325 for 30-40 min
Icing: Beat enough of the icing sugar into butter to make a smooth, spreadable consistency. Blend in lemon rind and juice
