French Toast with Orange Sauce

Ingredients

  • For the sauce:
  • 3/4 C. Orange Juice
  • 1 T. Cornstarch
  • 1/2 C. Sugar
  • 2 T. Unsalted Butter
  • 2 t. Fresh Lemon Juice
  • 2 T. Orange Zest
  • For the French Toast:
  • 6 Slices Texas Toast
  • 6 Large Eggs
  • 1 C. Milk
  • 1/2 t. Ground Cinnamon
  • 1/2 t. Ground Nutmeg
  • 1/2 t. Vanilla
  • 1 t. Orange Zest

Step 1

To prepare the sauce:
Place a 1 quart saucepan on medium heat. Add the orange juice and cornstarch and whisk together. Add the sugar and continue to stir occasionally until the sauce thickens.

Add the butter, lemon juice, and orange zest and continue to stir until the butter has been incorporated. Keep warm until ready to serve with the French toast.

To prepare the French toast:
Combine all French Toast ingredients, except the bread, in a large mixing bowl. Add a few slices of bread to the batter and allow the bread to absorb the batter. Flip the slice over so the batter absorbs on the other side of the bread.

Meanwhile, preheat a non-stick pan or griddle over medium-high heat. The pan/griddle is hot enough when a small amount of water "dances" on the surface.

Place the battered bread in the pan/on the griddle. as it browns, add the remaining bread to the batter to allow it to absorb on both sides. When the first side is a rich golden-brown (about 3-4 minutes), turn to cook the other side until done. Keep warm as you cook the remaining slices.

Serve with butter, syrup, and warm orange sauce.
