Ingredients

  • Toppings:
  • 1 tbsp vegetable oil
  • 1 cup chopped onions
  • 1 cup chopped mushrooms
  • 1/2 cup coarsely grated carrots
  • 1/3 cup finely chopped red and/or green pepper
  • 2 large cloves garlic, minced
  • 1 cup canned or cooked lentils
  • 1 cup canned or cooked white kidney beans
  • 2 tbsp dry bread crumbs or more
  • 1/4 tsp salt
  • pepper to taste
  • dry bread crumbs for coating
  • 4 whole wheat buns or pita halves, warmed
  • Salsa, tzatzkiki, baba ghanouj (eggplant spread), sliced tomatoes and cucumber, alfalfa sprouts.

Preparation

Step 1

In large skillet over medium heat, heat oil. Add onions, mushrooms, carrot, celery, pepper and garlic; cook until slightly softened. In bowl, mash lentils and beans well with fork or potato masher. Stir in vegetable mixture, bread crumbs, salt and pepper. Shape into 4 patties 1/2 inch (1cm) thick; coat lightly with bread crumbs and fry.
