Ingredients
- Toppings:
- 1 tbsp vegetable oil
- 1 cup chopped onions
- 1 cup chopped mushrooms
- 1/2 cup coarsely grated carrots
- 1/3 cup finely chopped red and/or green pepper
- 2 large cloves garlic, minced
- 1 cup canned or cooked lentils
- 1 cup canned or cooked white kidney beans
- 2 tbsp dry bread crumbs or more
- 1/4 tsp salt
- pepper to taste
- dry bread crumbs for coating
- 4 whole wheat buns or pita halves, warmed
- Salsa, tzatzkiki, baba ghanouj (eggplant spread), sliced tomatoes and cucumber, alfalfa sprouts.
Preparation
Step 1
In large skillet over medium heat, heat oil. Add onions, mushrooms, carrot, celery, pepper and garlic; cook until slightly softened. In bowl, mash lentils and beans well with fork or potato masher. Stir in vegetable mixture, bread crumbs, salt and pepper. Shape into 4 patties 1/2 inch (1cm) thick; coat lightly with bread crumbs and fry.
