Ingredients
- 2 cups all-purpose flour
- 4 tsp baking powder
- 1/2 tsp salt
- 4 T butter, cut into pieces
- 2/3 cup milk
- 1 lb ripe tomatoes, skinned and sliced
- salt and freshly ground black pepper
- 2 T torn basil leaves
- 1 T snipped chives
- 1 1/2 c sharp cheddar cheese
- 2 T mayonnaise
Preparation
Step 1
Use a 9-in pie plate. Preheat oven to 400.
In large bowl or mixer, mix flour, baking powder, and salt. Cut butter into flour mixture until it looks like crumbs. Stir in the milk to make a springy dough.
On a floured board, roll out half the dough and fit to pie plate. Top with tomatoes, sprinkle with basil and chives and 1/2 the cheese. Spread mayo on cheese, then remaining cheese.
Roll out the remaining dough and cover the pie with it. Bake for 20 minutes or until golden. Serve warm.
